Suiran, a 39-room boutique hotel located along the banks of the Hozu River in Kyoto, offers guests a chance to engage in memorable culinary experiences. Nestled next to the Arashiyama forest, the hotel provides a peaceful retreat amid the vibrant food scene of Kyoto, featuring curated multiday itineraries that explore local history and cuisine.
The hotel, dating back over a century, greets visitors with a Meiji-era wooden gate and leads them through a serene courtyard and stunning gardens. Inside, the cozy rooms, some with private patio onsens fed by nearby hot springs, create a tranquil atmosphere.
Dining at Suiran includes options like Cafe Hassui, located in the oldest building on the property, where guests can enjoy afternoon tea with views of the river and mountains. The main restaurant, Kyo Suiran, offers a fusion of French techniques and Japanese ingredients, featuring dishes like grilled cod and Wagyu beef.
For adventurous diners, Suiran has launched a one-day fermentation expedition as part of the Luxury Collection’s offerings. Participants can learn traditional pickling techniques at a local farm and factory, where they bury vegetables in a nuka mixture to ferment. This immersive experience culminates at Suiran's teppanyaki counter, where Chef Tsubasa Yamaguchi crafts a seven-course meal utilizing fermented ingredients, including local produce and seafood.
After a culinary journey filled with unique flavors and techniques, guests can retreat to their rooms, where they may find a tub of tsukemono as a tasty souvenir from their stay.
